Lung-Boosting Ginger Garlic Noodle Soup Recipe
Ingredients:
200g noodles (of your choice)
4 cups vegetable broth
3 cloves garlic, minced
1 small onion, finely chopped
1 tablespoon ginger, grated
1 cup sliced radishes
1 cup sliced carrots
2 cups spinach leaves
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
Salt and pepper to taste
Chopped green onions for garnish
Instructions:
Cook the noodles according to the package instructions. Drain and set aside.
In a large pot, heat a little oil over medium heat. Add minced garlic, chopped onion, and grated ginger. Sauté until fragrant and onions are translucent.
Add sliced radishes and carrots to the pot and cook for 3-4 minutes until they begin to soften.
Pour in the vegetable broth and bring to a simmer. Let it cook for about 10 minutes until the vegetables are tender.
Add the cooked noodles and spinach leaves to the pot. Stir well and let them heat through for a couple of minutes.
In a small bowl, mix soy sauce, rice vinegar, and sesame oil. Pour the sauce into the soup and stir to combine.
Season with salt and pepper to taste.
Serve the hot ginger garlic noodle soup in bowls, garnished with chopped green onions.
