Vegetarian Liver-Nourishing Stew Recipe

Ingredients: 

1 cup goji berries

2 cups sliced shiitake mushrooms

1 large lotus root, peeled and sliced

1 cup spinach

2 carrots, peeled and sliced

1 small daikon radish, peeled and sliced

1 tbsp sesame oil

2 cloves garlic, minced

1 inch ginger, peeled and minced

6 cups vegetable broth

Salt and pepper to taste

1 tbsp soy sauce

Fresh cilantro for garnish

Instructions: 

  1. Prepare Ingredients: Soak the goji berries in warm water for 20 minutes. Drain and set aside. Prepare all vegetables by washing, peeling, and cutting as specified.

  2. Sauté Aromatics: In a large pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant, about 1-2 minutes.

  3. Cook Vegetables: Add the shiitake mushrooms, lotus root, carrots, and daikon radish to the pot. Stir well to coat with oil and aromatics. Sauté for about 5 minutes until the vegetables start to soften.

  4. Simmer the Stew: Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to a simmer and add the soaked goji berries. Let simmer for 20 minutes, or until all vegetables are tender.

  5. Add Leafy Greens: Add the spinach to the stew, stirring until wilted, about 2 minutes.

  6. Season: Add soy sauce, salt, and pepper to taste. Adjust seasoning as necessary.

  7. Serve: Ladle the stew into bowls and garnish with fresh cilantro. Serve hot for a nourishing meal that supports liver health.
