Fire Body Balance Soup

Ingredients: 

2 cups chopped cucumber

2 cups diced watermelon

2 cups chopped leafy greens (such as spinach or kale)

1 cup chopped bitter melon

1 cup chopped dandelion greens

4 cups vegetable broth

2 cloves garlic, minced

1 tablespoon grated ginger

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro for garnish

Instructions: 

  1. Heat olive oil in a large pot over medium heat. Add minced garlic and grated ginger, and sauté until fragrant.

  2. Add chopped cucumber, watermelon, leafy greens, bitter melon, and dandelion greens to the pot. Cook for 5-7 minutes, stirring occasionally.

  3. Pour in vegetable broth and bring the soup to a simmer. Allow it to cook for another 10-15 minutes until all the vegetables are tender.

  4. Season with salt and pepper to taste.

  5. Serve hot, garnished with fresh cilantro.
