Earthy Comfort Stew

Ingredients: 

2 cups cooked root vegetables (such as sweet potatoes, carrots, and parsnips)

1 cup cooked grains (such as quinoa or brown rice)

1 cup cooked legumes (such as chickpeas or lentils)

1 onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

2 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish

Instructions: 

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, and sauté until softened.

  2. Add cooked root vegetables, grains, and legumes to the pot. Stir to combine.

  3. Pour in vegetable broth and bring the stew to a simmer.

  4. Season with ground cumin, paprika, salt, and pepper to taste. Adjust seasoning as needed.

  5. Let the stew simmer for 10-15 minutes to allow the flavours to meld together.

  6. Serve hot, garnished with fresh parsley.
