Red Bean Dessert Recipe

Ingredients: 

1 cup dried red beans

6 cups water

3/4 cup granulated sugar (adjust to taste)

1/4 teaspoon salt

1 can (13.5 oz) coconut milk

Crushed ice (optional)

Toppings (optional): cooked glutinous rice balls, tapioca pearls, sweetened condensed milk, coconut flakes, or fresh fruits

Instructions: 

Prepare the Red Beans:

  1. Rinse the dried red beans under cold water, then drain.

  2. In a large pot, add the red beans and cover with water. Bring to a boil over high heat.

  3. Once boiling, reduce heat to low and simmer uncovered for about 1 to 1.5 hours, or until the beans are soft and tender.

  4. Drain the cooked beans and set aside.

Make the Red Bean Soup:

  1. In the same pot, combine the cooked red beans, 6 cups of water, granulated sugar, and salt.

  2. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 20-30 minutes, stirring occasionally.

  3. Taste and adjust sweetness according to your preference by adding more sugar if necessary.

  4. Remove the pot from heat and let the red bean soup cool slightly.

Serve the Red Bean Dessert:

  1. Ladle the red bean soup into serving bowls.

  2. Add a generous splash of coconut milk to each bowl and stir gently to combine.

  3. Optionally, add crushed ice to each bowl for a refreshing touch.

  4. Garnish with your choice of toppings such as cooked glutinous rice balls, tapioca pearls, sweetened condensed milk, coconut flakes, or fresh fruits.

  5. Serve the red bean dessert warm or chilled, according to your preference
