Tomato Lentil Soup Recipe

Ingredients: 

1 tablespoon olive oil

1 onion, chopped

2 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 cup dried green lentils, rinsed and drained

1 can (14 oz) diced tomatoes

4 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions: 

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.

  2. Add the minced garlic, diced carrots, and diced celery to the pot. Cook for another 5 minutes, until the vegetables start to soften.

  3. Stir in the rinsed lentils, diced tomatoes (with their juices), vegetable broth, dried thyme, and dried oregano. Bring the soup to a simmer.

  4. Reduce the heat to low, cover, and let the soup simmer for about 25-30 minutes, or until the lentils are tender.

  5. Season the soup with salt and pepper to taste.

  6. Serve hot, garnished with fresh chopped parsley.
