Kidney Nourishing Delight Recipe
Ingredients:
1 cup dried kidney beans
2 tablespoons olive oil
1 onion, finely chopped
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 can diced tomatoes
4 cups vegetable broth
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Rinse the kidney beans under cold water and soak them overnight. Alternatively, you can use the quick soak method by bringing the beans to a boil in a pot of water, then letting them sit for an hour.
In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened and fragrant.
Add the diced carrots and celery to the pot, and cook for another 5 minutes until they begin to soften.
Drain the soaked kidney beans and add them to the pot, along with the diced tomatoes and vegetable broth.
Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 1 hour, or until the beans are tender.
