Fragrant Eggplant Casserole for Digestive Health Recipe

Ingredients: 

2 large eggplants, sliced

1 onion, sliced

2 cloves garlic, minced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 tablespoon ginger, minced

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 tablespoon vegetable oil

Salt and pepper to taste

Chopped green onions for garnish

Instructions: 

  1. Preheat your oven to 375°F (190°C).

  2. In a large bowl, mix together soy sauce, rice vinegar, sesame oil, minced garlic, and minced ginger to create a marinade.

  3. Add the sliced eggplants to the marinade, ensuring they are well coated. Let them marinate for about 15 minutes.

  4. Heat vegetable oil in a large skillet over medium heat. Add the marinated eggplants and cook until they are tender and slightly browned about 5-7 minutes. Remove from heat and set aside.

  5. In the same skillet, add a little more oil if needed, and sauté the sliced onion and bell peppers until they are soft and fragrant.

  6. Transfer the cooked vegetables to a casserole dish. Layer the sautéed eggplants on top.

  7. Cover the casserole dish with aluminium foil and bake in the preheated oven for 20-25 minutes, or until the vegetables are cooked through.

  8. Once done, remove the foil, sprinkle with chopped green onions for garnish, and serve hot.
