Carrot and Ginger Soup Recipe
Ingredients:
4 large carrots, peeled and chopped
1 onion, chopped
2 cloves of garlic, minced
1-inch piece of ginger, grated
4 cups vegetable broth
1 tablespoon olive oil
Salt and pepper to taste
Fresh parsley or cilantro for garnish
Instructions:
Heat olive oil in a large pot over medium heat. Add chopped onions and sauté until translucent.
Add minced garlic and grated ginger to the pot and cook for another minute until fragrant.
Add chopped carrots to the pot and stir to combine with the onion, garlic, and ginger mixture.
